Sequatchie Cove Cumberland Cheese
A simple yet flavorful artisanal cheese made on a family farm in the hills of Tennessee. Raw milk and 90 days of aging brings forth flavors of cultured buttermilk, sweet hay, and fruity tangy notes.
A many-time award winning artisanal cheese from one of the American South's leading cheesemakers. Named for the towering plateau that envelops Sequatchie Cove Farm, which also happens to be the world's longest hardwood-forested plateau. Cumberland is a tomme-style cheese, or more simply, inspired by the table cheeses of France. It is versatile and simple, yet impressive. It can be the star of a cheese board, or a afternoon snack with crackers, as well as a cooking ingredient.
Cumberland has a smooth firm texture, and the aroma of earthy dried leaves with flavors of buttermilk, sweet hay, and lemon curd. Pairs nicely with: Drier white wines such as a dry Riesling, Saisons, green pears, pecans, and strawberry or cherry preserves. Perfect in salads or melted in almost any dish.
Cheesemonger's Note: Cumberland's natural rind can occasionally feature spots of white or green mold - a normal part of the aging process. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
