Sequatchie Cove Shakerag Blue Cheese

Shakerag is made by Sequatchie Cove Creamery in Sequatchie Valley, Tennessee — a small family farm that's been aging cave-style cheeses in the Cumberland Plateau since 2006. This blue-veined wheel is wrapped in fig leaves soaked in Chattanooga Whiskey, which slowly perfumes the rind as it ages and gives the cheese its unmistakable character.

Cut into the center and you'll find a salty, honey-sweet interior threaded with blue — closer to a ripe fresh fig than anything sharp or funky. Move toward the rind and the flavor shifts: savory bacon notes come through, then dark chocolate, with a whiskey warmth that lingers. It's a blue that converts people who think they don't like blue cheese.

Serve it at room temperature on a wood board with toasted walnuts and a drizzle of sorghum. It holds its own next to a pour of bourbon or a dry cider. This is the kind of cheese you bring out when you want people to ask where it came from.

This knockout cheese is a Southern take on a leaf-wrapped blue: in this case the leaves are fig, and have been soaked in Chattanooga Whiskey before being wrapped around the cheese. The name is derived from both the beautiful Shakerag Hollow known for its wildflowers and rich moonshining past, as well as an old Prohibition era method of either alerting moonshiners to approaching revenue agents, or as a way to procure some white lightening of one's own. A truly southern cheese. The whiskey-soaked fig leaves impart aroma and flavor to the cheese, helping to seal in moisture and create a creamy yet crumbly texture. After 4 months of ageing, it has a sweet and fruity interior is reminiscent of root beer and lends itself to more savory notes of bacon and dark chocolate towards the rind. Obviously it pairs nicely with Chattanooga Whiskey, but also with barley wine, root beer, dried fruits, and raisin toast. It crumbles well for salads and steaks, and deserves a prime spot on the cheese board. Sequatchie Cove Creamery is a family-run business owned and operated by Nathan and Padgett Arnold. The focus here is on expressing the local southeastern Tennessee terroir, as well as sustainability; the 100% solar-powered creamery's most substantial waste product, whey, is fed back to the farm's livestock. We hand-cut and wrap this cheese in wedge of 1 pound and 8 ounces and you can purchase an entire wheel of approx. 6.5 pounds.
