A true bucket-list cheese that any cheese eater should try in their lifetime. Rogue River Blue is made in Oregon by Rogue Creamery. Each wheel is made from organic cow’s milk and gently wrapped in Syrah grape leaves which have been soaked in pear liqueur. The wheels are made for a short time in the Fall, then aged 9-11 months until the following Autumnal Equinox. On this day they are released to adoring fans. Due to limited production every year and high demand, the cheese is only available from Fall through approximately early Spring each year, creating a scramble by cheese shops and cheese lovers to get their yearly slice of the year’s precious batch. The cheese is a cacophony of flavors, all singing together in perfect balance. It’s salty and sweet, fruity and savory, rich yet tangy. Specific flavor notes have been recorded as toffee, brandy, fig, and truffle, with vanilla and a pronounced ‘blue’ flavor. Because of the long aging period, the cheese even develops the tiny calcium lactate crystals which create an occasional small “crunchy” texture in the cheese. This cheese is best savored alone at room temperature, to fully appreciate every nuance. To make a balanced plate, serve with crackers, bread, or fruit. It can be enjoyed with wines of distinction and age, like Viognier, Gewurztraminer, Syrah, Cabernet Franc, or Sauternes.
