It's full-bodied and flavorful with a long, smooth finish with brightness from the fresh milk. The texture is unlike any other goat cheese. The initial texture is firm and flaky but then it becomes smooth and creamy. Garrotxa, named after the county of origin, is a goat's milk cheese traditionally made from the milk of Murciana goats. This old world cheese was virtually extinct by the late 20th century, but fortunately it was revived by a local cooperative of farmers and cheesemakers. Its most distinctive characteristics is the velvety, grey-ish blue rind and ivory colored paste.
